Considered the greatest white wine in the world, that of Château d'Yquem comes from a small hill that benefits from a microclimate and an exceptional terroir. The vineyard, which has no fewer than 150 plots of different soils, is pampered throughout the year: each vine stock receives an average of 50 care treatments a year. The selection is particularly rigorous at Yquem: it is often said that a vine stock produces only one glass of wine. Harvesting is carried out in a minimum of four passes (seven in 1997!) to collect the grapes at perfect maturity, affected by noble rot. In the cellar, time is taken for vinification and aging. Thus, the wine is aged for up to 20 months in new barrels.
It should be noted that the estate also produces a dry white wine, Y d'Yquem, made from grapes not affected by botrytis cinerea. In some years, the entire harvest is downgraded (no production of Yquem in 1910, 1915, 1930, 1951, 1952, 1964, 1972, 1974, 1992 and 2012). Since 2022, the property has been certified organic (AB/ Eurofeuille).
