I think these are used for smørrebrød in Denmark (the open-faced sandwiches that you assemble at the table--lots of different ingredients including fresh herbs). Of course you can also use it for cheese and crackers, nuts and dried fruits, an olive bar, and any of the cuisines with lots of dipping sauces.
