In 1948, brothers Olivio and Marcello Cavallotto were among the first winemakers in the region to independently vinify and bottle Barolo made exclusively from their own estate grapes.Philosophy: A historical stronghold of traditional Barolo and natural organic viticulture (fully adopted since the 1970s), the winery utilizes long submerged-cap fermentations with indigenous yeasts and extended aging exclusively in large Slavonian oak casks.Vignolo Cru: Situated just below the Bricco Boschis hill, the Vignolo cru is a vineyard of roughly 2 hectares characterized by high limestone content in the soil, yielding wines of exceptional finesse, tannic structure, and extraordinary longevity.
